Determination of aging-relevant substances in beer by solid phase microextraction/capillar gas chromatography (SPME/GC)
Keywords:
Beer, carbonyl components, headspace-SPME-technique, gas chromatographyAbstract
A microanalytical method is described that enables the quantitaive determination of a whole spectrum of aging-relevant carbony components in beer. The carbonyls are separated from the beer matrix using the headspace-SPME-technique and are determined by gas chromatigraphy after derivatization on the SPME-fiber.
