Abstract

A microanalytical method is described that enables the quantitaive determination of a whole spectrum of aging-relevant carbony components in beer. The carbonyls are separated from the beer matrix using the headspace-SPME-technique and are determined by gas chromatigraphy after derivatization on the SPME-fiber.
