Abstract

In this third part, the solid-liquid extraction and solid-liquid separation methods are discussed. Thirteen different extraction techniques are assessed in relation to malt modification and the precision and their strengths and weaknesses are mentioned. The choice of methods is often a delicate task, but should always be related to the prediction of industrial wort quality. Several methods are obsolete, as they do not take into account basic biochemical and process engineering knowledge. The extract calculation by using volumentric methods should be abandoned in favour of mass determinations.
