Abstract

The methods discussed in this second parte are: 1) Physical methods, some of which still play their part in maltings; other, more promising, techniques, such as near -infra-red-reflectance spectroscopy, have still to be optimised. This last approach is of special interest to laboratories dealing with a large number of samples, but requires recalibration for each harvest; 2) Visual and colorimetric methods have been found interesting in recent years both for research and quality assurance. Colorimetric methods are being made more reliable by replacing the use of the eye by image analysis. An overall summary is presented for each method, this integrates the strengths and the weaknesses of each.
