Note on the EBC Method: High Molecular Weight β-Glucan (Fluorimetric Method)

Abstract
Fluorimetric determination of the total β-glucan content in barley, malt , wort and beer is based on the increase in the fluorescence intensity of the Calcofluor dye complexed with high molecular weight β-glucan above MW 10⁴. The methods were included into Analytica-EBC in 1989.
